Modern dining demands kitchens that are practical, hygienic, labor-saving, durable, and efficient. Designs often look neat yet block chefs, or ranges look good but work poorly. How should restaurants plan kitchens during fit-out?

How to raise kitchen efficiency
1. Do not over-partition. Oversized, fully closed rooms hide colleagues, lengthen carrying, slow work, and raise safety risk.
2. Floors must be slip-resistant and absorbent. Cheap glazed tile fails both; until better anti-slip tile is chosen, red quarry brick still works.
3. Provide enough sinks and adequately deep, sloped channels. Too few/small sinks make wash-up skip; shallow or rough drains puddle and smell. Place single or double sinks for thawing, rinsing, and chef water so hygiene holds.
4. Size kitchen area to covers per range. One range often serves 40–50 seats, sometimes 50–80 as efficiency rises. Too much area and oversized plant waste capital; too little starves production and forces later add-ons.
5. Buy by quality, not looks. Thin benches wobble, ranges warp, and fridges overheat. Flashy water hoods or lifts can turn chefs into repair techs after installers leave.
