Workroom design is inseparable from equipment selection and layout. Choose equipment first, size rooms from equipment footprints and aisles, then divide areas by workflow. Kitchen workroom design
(1) Separate work zones
While keeping workflow efficient, separate staple foods, side dishes, cold dishes, warewashing, rough prep, plating, and pass areas with physical or visual barriers for clearer management and food safety. Star-rated hotels need dedicated rooms—especially cold kitchens with ante-rooms, handwashing, restricted entry, and cooling. When space is tight, related zones can share a room (e.g. hot dishes with staple cooking under one hood).
(2) Prioritize key rooms
Protect area and location for main staple and side-dish rooms first, with complete equipment and working space. À la carte kitchens often follow “hot dishes first, pastry second” for peak speed and quality. Noodle shops, QSR, canteens, and commissaries set priorities by process and site.
(3) Secure required functions
Size each room for its process stage, support equipment, and working clearances. Too much equipment wastes space; too little hurts efficiency. In tight sites, keep high-use items (ranges, rice steamers, sinks, tables) first and share low-use items (refrigerators, water heaters).
(4) Easy work and circulation
Set aisle and working widths for tasks, carts, hotel grade, and installation needs—critical for efficiency.
(5) Leave maintenance space
Equipment and utilities need service access; daily cleaning needs clearances. Over-packing makes both hard.
(6) Leave flexibility
Large hotels often add dishes and equipment; reserve space when possible.
(7) Follow room-type principles
Rough prep, side dishes, staples, cold dishes, and warewashing are essentials. Design each room by minimum configuration and functional matching while protecting overall flow.
(8) Room area
Following the above with actual equipment yields the most rational area. When trade-offs appear, protect priorities and core functions.
