(2) Ranges and supporting equipment

Choose ranges for the main cuisine—wok stoves plus stock, braising, and stockpot ranges; seafood concepts may need steamers and fish stations. POS/KDS systems speed orders, but links to prep for ingredients must still stay clear so missing stock does not delay plating.

(10) Side-dish food safety

Protein-rich side dishes—especially thawed and washed fish, meat, poultry, and offal—spoil fast in summer. Provide enough refrigeration for quick store-and-retrieve. Canteens with large batches and long hold times after cutting need cold holding to protect nutrition and safety.
