How to Design the Main Kitchen Corridor

The main corridor links work zones, workrooms, and dining for people and materials. It sets process routes for ware, staff, information, and waste, and is critical to food-safety planning. Start zoning by fixing the main corridor. CHINENG explains design points and precautions.

How to design the main kitchen corridor

(1) Follow process flow

Route from non-food areas through food-handling areas to dining. Larger kitchens may have branches; start points must still support workroom layout. Whatever the structure, keep process flow short and clear.

(2) Protect corridor width

Size for traffic volume and hotel grade. Corridor-type mains should be at least 1.5 m; larger kitchens at least 1.7 m. Small kitchens using the pass aisle as main corridor still need over 1.2 m. Widths must also allow equipment delivery and installation.

(3) Raise utilization

A central corridor with rooms on both sides is more efficient than a wall corridor with doors on one side only. If one main corridor can connect all rooms while separating plating and soiled return, avoid adding a second.

(4) Keep traffic smooth

Fewer corridors, shorter runs, and straighter paths reduce conflict. Widen bends and use glazed partitions so corners are visible and collisions are less likely.

(5) Connect rooms cleanly

Door swings should not block the corridor—prefer inward or sliding doors. Where rooms have separate in/out doors, align them with process direction.

(6) Segment the corridor

Typically three segments: non-food handling, food handling, and plating/pass—with clear boundaries and doors; processing areas need fire doors. Even small kitchens without a true corridor should still segment paths by process.
