What pans suit commercial induction?
The base must be magnetic because heating relies on electromagnetic induction. Iron and steel match induction eddy-current heating well, convert energy to heat quickly, and help reduce field leakage—making them the preferred choice.
What pans do not suit induction?
Non-magnetic bases will not heat. Ceramic, glass, and copper are unsuitable: they do not couple well with the field and can be unsafe under high heat (ceramic/glass may shatter).
