The gas stove is the most-used station in any commercial kitchen. It generates the most heat, handles the most orders, and takes the most abuse. Choosing the wrong configuration means wasted fuel, slow cooking during rush hour, or unnecessary safety risk. This is not a feature preference — it is an infrastructure decision. Your gas type determines which model you need, and the two are not interchangeable without replacing burner nozzles.

The "tail" is the rear warm-holding area of the stove. It determines how many finished dishes can be kept warm while the next batch is cooking — and in a busy kitchen, that matters more than most buyers expect.

For chain restaurants where speed of service is measured in seconds, dual-tail configurations are nearly mandatory. The 8158 Chain Series in 1.5 m and 1.8 m widths includes dual-tail layout as standard.

4. When to Choose Each Series

Choose the 8138 Startup Series if:

• This is your first restaurant or you are opening a small outlet.

• Budget is a primary concern but you will not compromise on safety (flame failure protection is standard).

• Your kitchen volume is under 200 covers per shift.

• You need a 220 V single-phase connection (no 380 V required).

Choose the 8158 Chain Series if:

• You operate multiple locations or plan to scale.

• Your stove runs 12+ hours daily and needs to withstand continuous abuse.

• You need maximum heat output and faster recovery between orders.

• Your kitchen serves 300+ covers per shift with significant peak-hour load.

5. Installation Requirements

Gas supply: Dedicated LPG or natural gas line with appropriate regulator. Connection must be performed by a licensed gas fitter.

Electrical: 220 V single-phase, 120 W per burner for ignition and controls. Standard plug included.

Space: Allow 10 cm clearance on both sides and 15 cm behind the unit for ventilation. The +250 mm or +275 mm dimension indicates backsplash height above cooking surface.

Floor: Operating weight ranges from 25 kg to 93 kg depending on model. Ensure level surface capable of supporting the load.

Ventilation: Commercial kitchen exhaust hood is required above all gas cooking equipment by most fire and building codes. Consult your local authority.

6. FAQ

Q: Can I convert an LPG model to natural gas later?

Not without replacing burner nozzles. CHINENG models come in dedicated LPG (SZCY28) and NG (SZCT26) variants. Order the correct variant for your fuel source from the start.

Q: How many burners do I actually need?

Count your menu items that need live-fire cooking simultaneously. Two or fewer? A single-burner 0.88 m is enough. Three or more at once? Go with a 1.3 m or wider dual-burner model.

Q: Is a wider stove always better?

No. A 1.8 m stove with only one chef creates unused space that collects grease. Match the stove width to your staffing, not your ambition.

Q: What is the lifespan of a commercial gas stove?

With daily cleaning and annual maintenance, 8–12 years in continuous use. The 8158 Chain Series uses thicker stainless steel and is designed for longer service life.

Q: Is flame failure protection mandatory?

In most countries, yes. It is also standard on every CHINENG gas stove model regardless of series or price.
