1. Rational layout
1. The layout must serve the intended cuisine.
2. Keep raw and cooked, clean and soiled flows strictly separate to protect food hygiene.
3. Keep production flow short and direct, avoid cross-traffic, and make paths clear.
4. Functional zones should be distinct yet connected, so cooks can specialize and still cooperate.
5. Provide reasonable walking space, a clear view, and easier supervision.
6. Install a capable exhaust system so air circulates, heat is removed, and cooks work in comfort.
2. Isolate sound, heat, and odor between kitchen and dining room
A buffer is needed between kitchen and dining room, usually a pantry. Double swing doors, a pass-through screen, or an angled foyer can cut noise, heat, and odor and keep diners from seeing into the kitchen. Proper exhaust air volume also removes heat and grease from the ranges so the kitchen does not feel stuffy.
3. Ventilation at the kitchen and cooking line
Kitchen ventilation includes hoods, fans, exhaust ducts, makeup-air ducts, and air conditioning. Effective ventilation should meet the following:
1. Mechanical ventilation for hot-process rooms should be sized by heat balance. About 65% of exhaust should leave through hoods and 35% by general room exhaust, typically around 40 air changes per hour.
2. Capture velocity at the hood face should generally be at least 0.5 m/s; duct velocity should not exceed 10 m/s.
3. Makeup air should be about 70% of exhaust, with room negative pressure not greater than 5 Pa, so grease and odor do not drift into the dining room.
4. Equip smoke detectors, sprinklers, gas alarms, and CO2 extinguishers
In summary: kitchens carry many fire risks—gas or oil leaks, high temperatures at the range, and grease buildup in hoods. Poor maintenance can lead to fire. Besides staff fire training, the kitchen needs proper fire systems: smoke detectors, sprinklers, and CO2 extinguishers. Sites using gas should also install gas-leak alarms.
