Commercial kitchens have unique operating rules

Traditional catering thinking and short-term cost pressure mean many people underestimate how complex a commercial kitchen is. That hinders design. Designers must not only complete the technical work, but also explain regulations, promote better ideas, and coordinate the scheme.
