Kitchen wastewater comes from food washing, range and warewashing, and floor cleaning. Peaks are high, grease and solids are heavy, and temperatures are elevated. Two common schemes are a pipe-only system, or open channels combined with pipes.

Horizontal drains must not run above main prep, cooking, or plating areas unless protection is provided. University kitchens are large, with many rooms and scattered outlets, so a pipe-only layout often cannot avoid crossing those zones and then needs costly protection.

Staff also flush floors heavily during and after service. Floor drains alone rarely clear that water fast enough. Open channels handle it better. CHINENG therefore recommends combining open channels with pipe drainage for university canteen kitchens.

1. Drop the structural slab by 300 mm or more across the whole food-processing area (warewash, prep, and cooking).
