In modern foodservice, commercial induction cookers are common high-efficiency appliances. Without open flame, they heat cookware by electromagnetism for higher thermal efficiency. CHINENG explains what they are.

What is a commercial induction cooker?
It is induction built for commercial service—higher output than home units, stable, flame-free, and efficient. Used in restaurants, hotels, factories, schools, government, military, corporate kitchens, trains, and ships, and in sites that restrict open flame such as underground malls, railways, fuel stations, and aviation.
Working principle
High-frequency current from the electronics creates eddy currents in ferromagnetic pans. Iron molecules move rapidly, collide, and generate heat—converting electricity to heat for cooking.
Power range
Typically 3–35 kW. Higher power means higher temperature and faster heating, but more electricity and cost—size to covers and duty; custom power is available.
Cookware
Food-grade stainless-iron ferromagnetic pans couple best with eddy currents for high conversion and lower field leakage.
Lower operating cost
With expensive LPG and relatively cheaper electricity, long-term use often cuts utility spend.
High safety
No gas leak or open-flame risk. Protections include tilt cut-off, overtime power-off, dry-burn alarm, over/under-voltage and over-current protection, and auto stop on misuse.
Wherever power is available, commercial induction is convenient, safe, and practical. Follow CHINENG for more induction tips and models.
