What Power Supply Do Commercial Induction Cookers Use?

Commercial induction cookers (about 3–35 kW) differ from home units in power and venues—restaurants, factories, schools, military, trains, ships, and more. What electricity do they use? CHINENG explains.

What is three-phase power?

Three-phase AC delivers more output from similar generators and saves conductor material. It uses three live wires plus neutral: each live-to-neutral is 220 V; any two lives are 380 V for industrial use.

What is single-phase power?

One live and one neutral (plus earth when needed) for shock protection.

Differences

Single-phase 220 V suits homes, schools, and hotels for ordinary appliances. Three-phase 380 V between phases powers motors, pumps, and large plant.

Commercial induction usually uses three-phase

High output needs three-phase full-wave rectification with half-bridge or full-bridge inverters. Half-bridge designs often stay around 3.5–8 kW; higher power needs full-bridge circuits.

Confirm your site supply before buying. Units above about 3 kW typically need three-phase power wired to a breaker. Without three-phase service, apply to the utility or choose lower-power models that accept domestic supply—with lower heating speed than high-power units.
