1. Functional description: The kitchen typically includes main and side-dish prep rooms, dry and wet stores, a plating room, and cold storage.

2. Design method

1) Layout

① Provide prep rooms, dry store, wet store, and plating rooms sized to the kindergarten. Zones must be clear and properly equipped.

② Finishes and fixtures must meet local health-authority rules. A vertical flue discharging at roof level should be provided.

③ Whether a fuel room is needed, and how large it is, depends on local fuel practice. If bottled gas is used, a cylinder room is required.

④ Multi-storey kindergartens should include a small vertical food lift.

⑤ If the kitchen and dining points are in different buildings, connect them with a covered walkway.

⑥ Provide a dedicated goods entrance so deliveries are separated from children’s circulation.

⑦ Wash-up and vegetable prep are dirty areas; separate them from the cooking room with PVC partitions or light walls.

⑧ Arrange equipment by cooking process so internal routes are smooth and raw/cooked flows do not cross.

⑨ Place stores at the dedicated entrance for receiving, yet close to prep rooms for daily use. Fit shelves for classified storage of ingredients, seasonings, and dry goods, and leave space for refrigerators and freezers.

2) Form

① Design side windows and fans for good ventilation; fit an exhaust hood over the range discharging through the roof.

② To stop condensate dripping from a flat ceiling, use a sloped or pitched soffit so droplets run to a drip channel.

3) Materials

① Walls: glazed ceramic tile for easy washing.

② Floors: washable anti-slip tile.

③ Ceilings: cleanable metal panels such as aluminum baffle ceilings.

④ Doors and windows: insect screens; entrance doors need rodent guards.

⑤ Install dedicated UV disinfection lamps or other sterilizers. Switches must be separate from lighting, clearly marked, and mounted above 2 m so children cannot operate them.
