How to Design a Siu Mei (Roast Meat) Room in a Commercial Kitchen

2026-08-10

A specialty workroom produces distinctive dishes and often needs special equipment. Design starts from function: what is cooked, by which process, and to what standard. The siu mei room below shows the method.

How to design a siu mei room in a commercial kitchen

(1) Characteristics of siu mei dishes

Siu mei is a family of dishes covering roast, cured, and braised styles. Roast includes roast goose, pigeon, and char siu. Cured products include sausage, cured pork, jerky, cured pigeon, chicken legs, suckling pig, and fish fillet. Braised items include soy-braised duck and pork. In practice the whole range is often produced in one siu mei room.

(2) Cooking processes

Designers need enough culinary knowledge to match equipment to process. Roast items are usually marinated in a house sauce, air-dried, then roasted or smoked-steamed. Braised items are marinated, then simmered in sauce. Cured products take longer and are often bought in and finished on site. Shared process steps should be identified, then adjusted for each chef and menu.

(3) Equipment selection

Marinating, air-drying, roasting, smoking/steaming, and simmering all drive equipment needs. Some items are general-purpose; others are dedicated. Air-drying may use duck hanging racks, fans, or hanging-pig chillers. Roasting may use duck ovens, pig ovens, charcoal ovens, or electric ovens—confirm with the operator before design starts.

(4) Design approach

Larger rooms can cover roast, braised, and cured lines; smaller rooms take only part of that scope. Even roasting alone may need different plant for duck, suckling pig, and char siu. A basic room usually includes braising plus one roasting line; the chef states roasting needs, and supporting equipment follows the site.

Typical equipment: pig and duck ovens; hanging racks, fans, and hanging-pig chillers for post-marinade drying; a stockpot stove for braising; glass display cases and cured-product hanging rails; heated prep tables and finished-product chillers for hot holding and storage.
