Gas systems are spreading quickly. They cut emissions and offer advantages other fuels cannot match—especially natural gas versus LPG and town gas. CHINENG outlines gas characteristics in commercial kitchens.

(1) Safety. Natural gas density is about half that of air, so leaks disperse instead of pooling like LPG. Indoor pipeline pressure is about 0.002 MPa—roughly 1/300 of cylinder LPG pressure. Odorization also helps users detect leaks early.
(2) Economy. Natural gas is abundant and relatively low-cost and price-stable. About 1 m³ of natural gas roughly equals 1 kg of LPG in heat content, and natural gas is typically cheaper.
(3) Convenience. Piped gas reaches the kitchen directly—no cylinder changes, steady pressure for cooking, bathing, and heating.
(4) Cleanliness. Natural gas is mostly methane and burns cleanly. LPG burns less completely, producing CO and CO₂ and residues that shorten appliance life and soil the kitchen.
(5) Environmental performance. Natural gas avoids much of the air pollution from other fuels.
(6) High combustion efficiency. Natural gas can reach about 90% efficiency; coal and oil cannot match that, and unburned portions become pollutants.
LPG versus town gas
(1) Higher heating value. Equal volumes of LPG release about 6–8 times the heat of town gas when fully burned.
(2) Non-toxic. Town gas contains toxic carbon monoxide; LPG does not in the same way.
(3) Explosion risk. Higher density lets LPG pool and explode on ignition with severe damage potential.
