Every restaurant needs a kitchen, but concentrated power, gas, and combustibles raise fire risk. What prevention measures help? CHINENG shares the points below.

Kitchen fire prevention measures
1. Fire training: train hotel and restaurant kitchen staff regularly and set clear fire-safety rules.
2. Control fuel: keep cylinders together, well away from lamps and hot surfaces, so heat cannot rupture them and release gas.
3. Inspect gas and oil lines, flanges, and valves regularly. On a leak, shut the valve, ventilate, and ban open flame or electrical switching.
4. Use enclosed switches and sockets, keep water out, and mount them away from gas ranges so sparks cannot ignite leaked gas.
5. Do not overload equipment; protect appliances and wiring from moisture.
6. When deep-frying, fill oil to no more than two-thirds of the pot; keep water and debris out; use moderate heat to avoid oil ignition.
7. Clean walls and hoods near the range regularly; clean ducts at least every six months to prevent grease fires.
8. Keep wet blankets or asbestos blankets for oil and electrical fires, plus ABC dry-powder extinguishers in visible locations.
9. After service, close all gas/oil valves and cut gas, flame, and power before leaving.
10. Buy quality, genuine commercial kitchen equipment.
