All restaurants must keep ware hygienically safe. Volume and ware grade differ by venue, so cleaning plant differs. When a meal period exceeds about 2,000 pieces, consider automatic dishwashers and ware logistics.
Large restaurants usually keep manual wash sinks besides dishwashers—for glassware and tea ware dishwashers handle poorly, and as backup during faults or power loss. Commissaries and central kitchens wash plates plus large transport containers, so they need dishwashers, large sinks, and racks for pans, buckets, and delivery boxes, plus specialty wash/disinfection equipment.
For thousands of diners, ware issue, soiled return, washing, disinfection, and restocking must match volume and speed, with strong cross-contamination control. Lines may use six sinks in sequence: scrape, rinse solids, degrease, detergent rinse, sanitizer, clear rinse, drain on a clean table, then cabinet disinfection. Open warewashing under guest view also motivates staff and builds diner confidence.
