Kitchen waste classification and characteristics
1) Exhaust air
Mainly grease fumes, steam, heat, and humidity, plus sewer odors, diesel smells, and gas leaks. Hoods discharge most of it outdoors; rooms without hoods rely on ventilation. Rough prep, seafood holding, and fish rooms are humid and fishy—clean and ventilate promptly to prevent mold.
2) Solid waste
Sources are many and scattered from kitchen to dining room: guest leftovers and prep trimmings. The largest volume is usually in rough prep—sort, hold cold, and remove on schedule.
3) Wastewater
Large volumes leave through drains, sometimes via open channels. Reduce floor flooding with proper piping. Steamer and range wastes without connections, or refrigerator condensate without floor drains, wet floors, create slip hazards, and track dirt into dining areas.
