Common hotel kitchen hazards

1. Fuel: open flame with LPG, town gas, natural gas, or charcoal—leaks, burns, and explosions if mishandled.

2. Grease fumes: humid kitchens accumulate combustible grease and soot on walls, ducts, and hoods—uncleaned ducts can ignite.

3. Cooking appliances: pressure cookers, steamers, rice cookers, freezers, and ovens can start fires if misused.

4. Inspect gas pipes, joints, meters, and valves; on leak, shut valve, ventilate, ban flame and switching.

5. Do not overload equipment; protect wiring from heat, moisture, corrosion, and abrasion.

6. Fill fryers to no more than two-thirds to prevent overflow fires.

7. Provide ABC dry powder extinguishers and fire blankets.
