School canteens hold fond memories—great value and shared lunches. What kitchen equipment does a large school canteen need? CHINENG explains.

Typical equipment
1. Cooking appliances: food-grade stainless commercial ranges—not home gas stoves. Commercial induction offers waterproofing, leakage protection, dry-burn alarms, adjustable power, durability, and easy cleaning for high headcount. Common items: double wok ranges, large wok ranges, stock burners, clay-pot ranges, noodle cookers, steamers, fryers.
2. Exhaust: required by hygiene rules—hoods, grease filters, fans, cabinets, control boxes, ducts covering beyond the cook line. Clean ducts and replace filters regularly.
3. Prep furniture: sinks, stands, dough tables, flour racks, 4–5 tier shelves, chopstick/cart/spice/service/scrap tables, mop and thaw sinks as needed.
4. Cold holding: 4-/6-door fridges or cold rooms for longer shelf life; hot holding counters and insulated urns for service temperature.
5. Small machines: slicers, mixers, dough kneaders/sheeters, soymilk machines—spec by canteen grade.
6. Disinfection: disinfection cabinets, dishwashers, vegetable washers.
7. Dining utensils: service ware and vessels.
Design principles
1. Safety: keep electric and gas gear apart; hood coverage ≥20% beyond gas equipment footprint to stop sparks reaching ceilings.
2. Hygiene: easy-clean equipment and sound drainage protect food quality.
