Restaurants produce plenty of kitchen waste with every meal. How is it handled? CHINENG explains.

What is kitchen waste?
Discarded leaves, leftovers, peels, shells, tea dregs, bones, and similar scraps from food prep and service.
How to treat it
1. Weight-reduction projects for small/mid restaurants: sort, crush, dewater, de-oil, separate oil/water, pack solids, discharge sewage, and collect waste oil—cutting weight and fees while recycling solids and oil.
2. Centralized systems for large sites: loading, weighing, sorting, crushing, solid–liquid and oil–water separation, conveying, fermentation, recovery, odor control, and controls—standard lines up to about 15 tons/day (larger on custom). Solids become fertilizer or feed; oil is sold for industrial reuse.
3. Outsource collection to specialized haulers.
Hazards
Pathogens such as Salmonella and Staphylococcus can threaten health. Incineration emits harmful gases; landfill risks soil and groundwater pollution.
