Fire protection systems for foodservice kitchens
1. Gas extinguishing systems: ranges often burn LPG or natural gas, and cooking oil makes water or foam less suitable. Gas extinguishing is preferred, though cost is higher.
2. Automatic fire alarm systems: kitchens may be staffed by day but empty at night. Without an alarm, a late fire can grow into a major incident, so automatic detection is still needed.
3. Dedicated kitchen suppression: agent cylinders, fuel shutoff, mechanical actuation, nozzles and piping, fusible-link detectors, control lines, and manual emergency start. Once installed, it can protect ranges, hoods, and ducts around the clock.
4. Outdoor hydrants: supply fire engines from municipal or outdoor fire mains, or feed hoses and nozzles directly. They remain key firefighting assets.
5. Escape routes: stairs and corridors with exit lighting for rescue and evacuation; their role in emergencies is critical.
Kitchens also need practical extinguishers and aids—dry powder extinguishers, wet blankets, and sand—to knock down early-stage fires quickly.
