Stainless steel kitchen equipment is widely used in commercial kitchens for corrosion resistance, hygiene, and easy cleaning. Stainless steel commonly comes as 304 and 201 grades—what is the difference? See the comparison below.

Differences between 304 and 201 stainless steel kitchen equipment
1. Corrosion resistance: Because of different alloy content, corrosion performance differs. 304 contains more nickel, which largely determines rust resistance. In simple terms, 304 is better for outdoor or harsh exposure and resists rust longer; 201 is generally for indoor use and can rust if left outdoors for long periods. Put the right grade in the right place to get the best value.
2. Flexibility: Both grades work well in kitchen equipment, but carbon content differs. 201 is harder and more brittle; 304 is more flexible. A hard scraper leaves clearer marks on 201, while marks on 304 are less obvious.
3. Brightness: 201 contains manganese; 304 does not. 201 looks slightly darker and 304 brighter, though the difference is hard to see with the naked eye. Star hotels that need higher finish often choose 304; smaller restaurants may choose 201.
4. Price: 304 sheet is more expensive on the market; 201 is cheaper than 304.
