Pros and cons of foodservice grease interceptors

1. Air-flotation oil–water separators — advantages: strong oil removal for animal and mineral oils; after chemical demulsification they can also treat emulsified oil, while cutting SS and BOD5.

Disadvantages:

1) High running cost from energy and chemicals, with secondary pollution and poor resource recovery;

2) Expensive, complex equipment needing pressurization and dosing systems;

3) Recoverable grease often becomes unusable scum that still needs landfill or incineration.

Main traits:

1) High operating cost—electrolysis or ozone generation uses a lot of power;

2) Average oil removal, strongly affected by wastewater composition and reaction rate;

3. Traditional grease traps: many hotels build them, but separation is weak. When flow changes, grease and food scraps between baffles wash into drains—and kitchen flow is rarely steady—so traps often become decoration for inspections. Unstable oil–water interfaces also block automatic skimming, so staff must dig grease and solids daily or pipes clog and the trap fails its purpose.
