How to Clean a Canteen Range Hood

Why clean canteen and restaurant range hoods? Without regular cleaning, ducts fill with grease, suction falls, and fire risk rises. How should a canteen hood be cleaned? CHINENG explains the methods below.

Cleaning methods for canteen range hoods

1. Hood cleaning: Clean canopy surfaces, filters, grease screens, internal lamp covers, exhaust openings, motors, and range tops. Scrape heavy grease, spray degreaser, and use high-pressure jetting; soak and service grease filters so a protective film reduces new deposits and fire hazards.

2. Duct cleaning:

a. For horizontal ducts large enough for entry, scrape and clean all four walls until free of grease.

b. Where ducts are too narrow, dismantle sections at workable intervals for cleaning.

c. Where neither is possible, specialists cut access openings with spark-free tools, clean inside, then reseal.

3. Water-wash canopy, filter fans, and nozzles:

a. Use dedicated high-pressure equipment and degreaser on canopies and filter fans.

b. Remove, soak, clear, and refit nozzles in order after canopy cleaning.

c. Wipe equipment dry, then polish stainless surfaces with stainless brightener. Fan cleaning: isolate power, open the housing, scrape deposits, clean each blade to primer, reassemble, and wipe the exterior.

4. Purifier cleaning: Isolate power, open the cabinet, disconnect cell wiring, and withdraw plates in order.

a. Scrape surface grease from plates.

b. Soak plates in metal degreasing solution until soil dissolves.

c. High-pressure rinse with degreaser then clean water; drain dry.

d. Clean the cabinet interior, dry plates, refit in original order, reconnect power, close the cabinet, wipe the exterior, and commission.

5. Acceptance standards:

a. After cleaning, duct metal should be visible without chunk grease;

b. Range tops and canopy back walls should be bright and grease-free;

c. Fan blades should show primer; no sludge under the motor;

d. Purifier cabinet and plate interiors should be free of grease.

6. Fully test equipment before dismantling and photograph the process for records.
