Induction cookers are common in foodservice, with many styles. What is a concave induction cooker? CHINENG explains.

What is a concave induction cooker?
It heats food by electromagnetic induction. Alternating current in the coil under the heat-resistant glass-ceramic top creates a magnetic field; eddy currents in iron or stainless cookware heat the pan base quickly.
Advantages
Compared with flat hobs, the concave surface wraps more of the wok base, suits traditional round-bottom pans, enlarges heated contact area, and delivers more even stir-fry heat while keeping high induction efficiency and familiar cooking habits.
Disadvantages
It only fits concave cookware—not flat pans. Better for stir-fry; flat hobs suit stewing. Black crystal tops cost more and are harder to make; damage usually needs factory replacement. Wok diameters vary by brand, so compatibility differs—prefer major brands for broader cookware fit.
